How to use Noto Sans for posts but Sans UI for everything else?

I have been trialing with the Google Noto fonts. The Noto Sans is quite pleasant for longer posts, as it has a bit more horizontal spacing/width. I looks fantastic on deviced with high DPI, such as modern mobile phones and larger devices with a very high resolution.

The width of Noto Sans may cause some issues with the UI of Discourse, such as the burger menu. The Noto font package includes a Noto Sans UI version of the font, with a smaller horizontal footprint. This makes me wonder how to customize Discourse so that:

The posts are using font Noto Sans

All of the UI are in Noto Sans UI

This could be visually nice, or what say you?

It's a cool feature, but on some of our categories with backgrounds, it can make the text hard to read for the first few seconds and appears a bit jarring. My question: is there a way to make it work with a network share and a symlink or some other way?

which looks like a fairly definitive guide to the user trust levels is still accurate. I say that aiming not to be scathing and appreciating I may be on the receiving end of some harsh emoji... but I had a quick look at the update history on it and it looks like mid 2015 were the last updates.

I know that each hosted solution can reconfigure these, so our own may be slightly different, but it's useful to have some form of reference that I can access.

If this isn't the definitive guide or a more recently updated version exists, can someone point me to it please
